Macadamia Nuts are native to Australia and this delicious slice is very popular. If it is difficult to find Macadamia Nuts where you live, you can use other Nuts such as Cashews, Walnuts OR Pecans, but the slice wouldn’t taste the same. Smaller OR broken Macadamia Nuts are less expensive and they are perfect for this slice.

Ingredients

200g Pitted Dates *coarsely chopped
200g Macadamia Nuts *cut in half OR quarters
*Note: You don’t need to add 200g Pitted Dates and Macadamia Nuts. You can alter the amount, but I recommend to add at least 1 cupful of each.
125g Butter
1 cup Brown Sugar *lightly packed
1 pinch Salt
1 large Egg
1 cup Self-Raising Flour
1 teaspoon Ground Ginger
1 teaspoon Ground Cinnamon
1 teaspoon Vanilla Extract

Method
  1. Line a brownie tin with baking paper. Preheat oven to 170°C.
  2. Coarsely chop up Pitted Dates. Cut Macadamia Nuts in half OR quarters, OR you may wish to coarsely chop up.
  3. Place Butter in a heat-proof mixing bowl and melt in the microwave. Add Brown Sugar and Salt, mix well. Then add Egg and mix well.
  4. Add all other ingredients and mix well to combine. The mixture is very thick, almost like cookie dough. Spread the mixture in the prepared tin evenly.
  5. Bake for 20 to 25 minutes OR until cooked through. Transfer to a wire rack and cool. When cooled, use a sharp knife to cut into 4-5cm squares.
