
I am writing this recipe for my son and daughter. When they were young, I cooked this Egg-only fried rice quite often because they asked me to cook it. They say it was one of their favourites and they are still fond of it. I always use dried Chopped Chives for this dish, and another essential ingredient is Ground Paprika. I first added it because I wanted to make the fried rice slightly orange colour. This fried rice seems to be something special for my children.

Ingredients
3 Eggs
1 tablespoon Dry Chopped Chives
1 pinch Salt
1 tablespoon Oil
2 servings warm Cooked Rice *about 360 to 400g
Seasoning
1/4 teaspoon Salt
1/8 teaspoon White Pepper
1/4 teaspoon Ground Paprika
1/4 teaspoon Asian Chicken Bouillon Powder
1/4 teaspoon Garlic Powder
Method
- Combine all the Seasoning ingredients in a small bowl.
- Place Eggs, Chives and 1 pinch Salt in a bowl and lightly whisk.
- Heat Oil in a large frying pan or wok. When the Oil is hot, add the Egg mixture, which should start cooking immediately, add warmed Cooked Rice. Cook stirring, add the Seasoning mixture and combine well.
