
When I was too tired to cook my lunch the other day, I made dish rice dish. I always have Boiled Eggs that my husband makes and stocks in the fridge. I had some leftover blanched Spinach and cooked Rice. I mixed them together, seasoned with Sesame Oil and Soy Sauce, I added Toasted Nori and Sesame Seeds as well. I just needed something to eat, BUT it was delicious. I made it again today. I enjoyed it with a soup and Takuan.

Ingredients
60g Blanched Spinach
1 teaspoon Toasted Sesame Seeds
1 teaspoon Sesame Oil
1 & 1/2 teaspoon Soy Sauce *plus extra if required
1 pinch Dashi Powder *I used Katsuo (Bonito) Dashi
1 Boiled Egg *cut into bite-size pieces
1/2 sheet Toasted Nori *torn into small pieces
1 serving (about 180g) warm Cooked Short Grain Rice
Method
- Squeeze Blanched Spinach and remove excess water, cut into about 3cm long pieces, and place in a mixing bowl OR serving bowl.
- Add Toasted Sesame Seeds, Sesame Oil, Soy Sauce and Dashi Powder, and mix to combine.
- Add warm Cooked Rice, mix to combine, then add Egg and Nori, and gently combine. Add extra Soy Sauce if required and enjoy.
