If you stir-fry fresh Spinach, a lot of water would come out of it, and the water has unpleasant taste. I strongly recommend to blanch Spinach before you stir-fry it, so that you won’t have the unpleasant taste, and also you can reduce oxalic acid that can cause health problems. This is a very simple dish. You can use more Spinach and Pork, and alter the amount of Oyster Sauce accordingly.

Ingredients

1 bunch Spinach *300 to 400g
150g thinly sliced Pork *cut into bite-size pieces
Salt & White Pepper
1 small clove Garlic *finely chopped
1 teaspoons Sesame Oil
1 tablespoon Oyster Sauce

Method
  1. Wash Spinach well and blanch in boiling water. Dip in cold water to stop cooking further, drain well and squeeze to remove excess water. Cut into 5cm length, squeeze to remove excess water once again.
  2. Heat Sesame Oil in a frying pan over medium-high heat, cook Pork and Garlic, season with Salt & White Pepper. Then add Spinach, and mix to combine. Season with Oyster Sauce.
