I have been wanting to make ‘Mont Blanc Cake’ and looking for Sweet Chestnut Paste at various stores, but it was too difficult to find. Canned Sweet Chestnut Paste is available for online purchase, but they are very expensive. Then I realised that almost all Asian grocery stores sell Roasted & Peeled Chestnuts, and I can make Sweet Chestnut Paste using them. I tried it today and it was absolutely easy! The colour of the paste was a little too light when I made it, but it turned darker next day.

Ingredients

150g Roasted & Peeled Chestnuts

4 tablespoons Sugar *alter the amount to suit your taste
1 pinch Salt
3 tablespoons Water *OR Milk, add extra as required
1/2 teaspoon Rum *optional, OR a few drops Vanilla Extract

Method
  1. If the Chestnuts have unpleasant smell, rinse under boiling water.
  2. Place all ingredients in a jug OR suitable bowl, and use a hand blender to blend into a smooth paste, adding extra Water (OR Milk), until desired consistency is achieved.
  3. *Note: Small food processor might be an ideal tool to blend the ingredinets.
