Enoki can be replaced with Shiitake, Shimeji, Oyster Mushrooms OR other Asian mushrooms. You may wish to add some Eggs.

4 cups Dashi Stock  *See ‘Dashi Stock’ page
1 teaspoon Salt
1 tablespoon Soy Sauce
1/2 to 1 block Tofu *soft type
100 to 200g Enoki
2 Spring Onions *finely Chopped

  1. Cut Tofu and Enoki into small pieces.
  2. Bring Dashi Stock to the boil in a large saucepan.
    *Note: Use about 2 teaspoons Dashi Powder for 4 cups Water OR according to the instruction on the package.
  3. Season with Salt and Soy Sauce. Then add Enoki and Tofu, bring back to the boil.
  4. Add chopped Spring Onion and enjoy.
