I occasionally crave this Udon Soup with Wakame & Nori. It can be just the soup, but I often add Cooked Udon Noodles and make it into a meal. It is probably not very nutritious, but it’s OK as my diet is generally well balanced. You probably have some particular foods you occasionally crave. This is one of mine.

Ingredients

1 serving Cooked Udon Noodles *Frozen type recommended
1 tablespoon Dried & Cut Wakame
1/2 sheet Toasted Nori *torn into bite-size pieces
Finely chopped Spring Onion
Shichimi (Japanese Chilli Spice Mix)

Soup
300ml Water
3/4 teaspoon Dashi Powder *I used 1/2 teaspoon Bonito Dashi & 1/4 teaspoon Kombu (Kelp) Dashi
1/4 teaspoon Salt
1 tablespoon Sake (Rice Wine)
1/2 tablespoon Soy Sauce
1/2 tablespoon Mirin

Method
  1. Place all the Soup ingredients in a saucepan, and bring to the Boil. *Note: Alter the amount of Salt OR Soy Sauce to suit your taste.
  2. Add Cooked Udon Noodles and Dried & Cut Wakame, and heat until Udon Noodles are soft.
  3. Place in a serving bowl, scatter Nori, add some finely chopped Spring Onion and Shichimi (Japanese Chilli Spice Mix), and enjoy.
