This is a recreation of the salad that I ate at a restaurant in Port Douglas, Queensland. The salad I ate at the restaurant was mostly Wombok and there were some small Roast Pork pieces with salty crackling in it. It cost me nearly $30 and I felt totally ripped off. With the same cost, I could have made this salad more than 10 servings!!!


Makes

1 to 2 servings

Ingredients

2 to 3 leaves Wombok *120 to 150g
1/8 Red Onion *thinly sliced
Coriander *I added about 15g
100g Roast Pork with Crackling *cut into small bite-size pieces

Dressing
1/4 teaspoon grated Garlic
1/2 tablespoon Lemon OR Lime Juice *OR Rice Vinegar
1/2 tablespoon Fish Sauce
1/2 teaspoon Sugar
1 pinch Chilli Flakes *OR Chilli as much as required

Method
  1. Combine all the Dressing ingredients in a mixing bowl.
  2. Wash Wombok, remove excess water, cut in half lengthways if large, then cut into 1cm wide pieces, and add to the bowl.
  3. Wash Coriander, remove excess water, cut into 2-3cm long pieces, and add to the bowl. Add thinly sliced Red Onion as well, and mix to combine.
  4. Add Roasted Pork pieces, mix to combine, and enjoy.
