
One of my family’s favourite dinner menus is Stir-fried Tomatoes. I often add Egg, Tofu OR Prawns. The essential ingredients are Tomatoes, Garlic and Soy Sauce. Today I added Egg and Harusame Noodles (Bean Thread Noodles). Harusame Noodles sucked up the yummy sauce and they were absolutely delicious! This recipe is supposed to be for 4 servings but I ate half of it.

Ingredients
80g Dried Harusame Noodles (Bean Thread Noodles)
4 Eggs
Salt & White Pepper
2 to 3 Tomatoes *cut into large bite-size pieces
1 clove Garlic *finely chopped
Chilli Flakes as required *optional
1 tablespoon Oil *plus extra
4 tablespoons Sake (Rice Wine) OR Water
2 tablespoons Soy Sauce
Finely chopped Spring Onion
Method
- Soak Harusame Noodles in cold water for 15 minutes. When soft, drain, and tear short if very long.
- Whisk Eggs in a bowl, and season lightly with Salt & White Pepper.
- Heat Oil in a frying pan over medium-high heat, and cook Eggs, gently stirring until set but still soft. Transfer to a plate and set aside.
- Add some extra Oil to the pan, and add Garlic. When aromatic, add Tomatoes. When Tomatoes started softening, add Sake (Rice Wine) and Soy Sauce, and bring to the boil.
- Add the drained Harusame Noodles, and cook until transparent and soft. Return the Egg and gently combine.
- Sprinkle with some finely chopped Spring Onion and serve immediately.
