One of my family’s favourite dinner menus is Stir-fried Tomatoes. I often add Egg, Tofu OR Prawns. The essential ingredients are Tomatoes, Garlic and Soy Sauce. Today I added Egg and Harusame Noodles (Bean Thread Noodles). Harusame Noodles sucked up the yummy sauce and they were absolutely delicious! This recipe is supposed to be for 4 servings but I ate half of it.

Ingredients

80g Dried Harusame Noodles (Bean Thread Noodles)
4 Eggs
Salt & White Pepper
2 to 3 Tomatoes *cut into large bite-size pieces
1 clove Garlic *finely chopped
Chilli Flakes as required *optional
1 tablespoon Oil *plus extra
4 tablespoons Sake (Rice Wine) OR Water
2 tablespoons Soy Sauce
Finely chopped Spring Onion

Method
  1. Soak Harusame Noodles in cold water for 15 minutes. When soft, drain, and tear short if very long.
  2. Whisk Eggs in a bowl, and season lightly with Salt & White Pepper.
  3. Heat Oil in a frying pan over medium-high heat, and cook Eggs, gently stirring until set but still soft. Transfer to a plate and set aside.
  4. Add some extra Oil to the pan, and add Garlic. When aromatic, add Tomatoes. When Tomatoes started softening, add Sake (Rice Wine) and Soy Sauce, and bring to the boil.
  5. Add the drained Harusame Noodles, and cook until transparent and soft. Return the Egg and gently combine.
  6. Sprinkle with some finely chopped Spring Onion and serve immediately.
