The other day I made ‘Dates & Cocoa Spread’. I added no sugar at all, but it was very sweet. I used it to make these healthy slices. To be honest, I thought a little bit more sweetness was required to enjoy them, so I added a small handful of Dark Chocolate Chips today. This is a very satisfying yummy snack!

Makes

16 Slices *I used 20cm Square Tin

Ingredients

1 cup (about 125g) Dried Pitted Dates *chopped
2/3 cup Milk
2 tablespoons Cocoa Powder
1 small pinch Salt *optional
2 cups Rolled Oats
1 large Egg *whisked
1/2 cup Roasted Almonds *OR other Nuts of your choice, coarsely chopped
2 to 3 tablespoonfuls Dark Chocolate Chips

Method
  1. Preheat oven to 180°C. Line a 20cm to 22cm square cake tin with baking paper.
  2. Finely chop up Dried Pitted Dates and place in a small saucepan. Add Milk, and cook over low heat, frequently stirring with a spatula, until the mixture turns a paste. Add Cocoa Powder and mix well. *Note: This process can be done using a heat-proof bowl in the microwave.
  3. Place the Dates mixture in a mixing bowl, add Salt and Oats, mix to combine, then add Egg, and mix well. Add Nuts (and Chocolate Chips), and combine evenly.
  4. Place the mixture in the prepared cake tin, spread evenly, then press down firmly.
  5. Bake for 20 to 25 minutes and cool completely. Cut into 4-5cm squares.
