
‘Atsu-age’ is the Japanese name for Fried Tofu, that is commonly 2-3cm thick. It is often a large block, but sometimes it is 3-4cm cubes. This is a great vegetarian dish that is so tasty and nutritious. Actually, this is one of my children’s favourite dishes. You can cook Daikon (White Radish) with ‘Atsu-age’ in this dish.

Ingredients
1 pack OR enough for 4 servings ‘Atsu-age’ (Fried Tofu)
1 small piece Ginger *sliced into fine strips
1 cup Dashi Stock *OR 1 cup Water and 1/2 teaspoon Dashi Powder
2 tablespoons Sugar
2 tablespoons Mirin
4 tablespoons Soy Sauce
Method
- Place ‘Atsu-age’ in a colander and pour over very hot water to remove excess oil. Cut into 3 to 4cm size pieces.
- Place ‘Atsu-age’ in a saucepan, add Dashi, Ginger, Sugar, Mirin and Soy Sauce, and simmer until the sauce thickens and almost gone.

Could you possibly actually have a recipe for the atsu age itself? It’s not super helpful to read in a recipe for a thing to have the thing already 🤗

Elysa, thank you for your comment. ‘Atsu-age’ is the Japanese name for the Fried Tofu. I suppose you can make it by frying Tofu in hot oil, but most people don’t make it, just like most people don’t make Tofu. Many Asian grocery stores sell Fried Tofu. I hope you can find it. If you couldn’t, I recommend to use medium firm type Tofu. Cut into smaller pieces, dry with tea towel or paper towel, and fry in hot oil until lightly browned. It would take time to brown them.
