I have repeatedly written about Gobō (Burdock Root) that is a very popular vegetable but it is IMPOSSIBLE to find where I live. A few days ago, I went to a local Korean grocery store as they sell some Japanese food as well, and found Frozen Sliced Gobō. I bought a bag and cooked this rice dish I wanted to cook for a long time. Oh… the flavour of Gobō!!! How delicious!!!

Ingredients

2 cups (*180ml cup) Japanese Short Grain Rice
1 tablespoon Sesame Oil *OR Oil of your choice
400g thinly sliced Beef *cut into bite-size
150g sliced Gobō *I used Frozen Gobō

2 tablespoons Sugar
4 tablespoons Soy Sauce
1 tablespoon Mirin
1/2 to 1 teaspoon Rice Vinegar *optional
Finely chopped Spring Onion
Shichimi (Japanese Chilli Spice Mix) *optional

Method
  1. Wash Rice and cook as normal.
  2. Heat Sesame Oil in a frying pan and cook Gobō slices for a few minutes, add Beef. When Beef changes colour, add Sugar, Soy Sauce and Mirin, and cook until the sauce is almost gone. Add Rice Vinegar and mix well.
  3. Add the Beef & Gobō mixture to the cooked Rice, and mix to combine. Sprinkle with some finely chopped Spring Onion and Shichimi (Japanese Chilli Spice Mix), and enjoy.
