On the other day I bought very smooth-textured Carrots from an ALDI store. They were so sweet and made this simple salad absolutely delicious. I usually add small amount of Sugar to this salad, but you may need no Sugar at all if the Carrots are sweet.

2 large Carrots *sliced OR shredded into thin strips
1/2 cup Toasted Walnuts
1/4 teaspoon Salt
1 tablespoon Wholegrain Mustard
1 tablespoon Lemon Juice
1/2 tablespoon White Wine Vinegar *optional, depends on the sourness of the Lemon Juice
1 teaspoon Sugar
1 tablespoon Olive Oil *optional
Freshly Ground Black Pepper

  1. Combine Olive Oil, Lemon Juice, Wholegrain Mustard, Salt and Black Pepper in a large bowl.
  2. Add Carrots and Walnuts and toss and mix well. Taste and adjust the flavour by adding White Wine Vinegar and Sugar if required.
  3. I recommend to refrigerate this salad for 30 minutes, then toss again before serving.
