I know Potato Pancakes such as Hash Browns are not healthy food but I love them. I try to create less unhealthy Potato Pancakes by adding Vegetables OR mashed Chickpeas, etc. Today I added a can of Mackerel and Cheese to this one. These Pancakes are high in calories but seriously delicious. You got to try it if you love Mackerel.

4 x 10cm Pancakes
Ingredients
1 Potato *about 180g
1 thick Spring Onion *finely chopped
1 Egg
1/8 to 1/4 teaspoon Salt *depending on the saltiness of Mackerel
Ground Pepper OR Chilli as required
1/4 cup Self-Raising *plus extra
1 can (125g) Mackerel in Brine *drained and broken into small pieces
1/4 cupful shredded Cheese or your choice *I used Cheddar
Oil for cooking
Method
- Peel Potato and coarsely grate it. Remove excess water and place in a mixing bowl.
- Add finely chopped Spring Onion, Egg, Salt, Pepper (OR Chilli) and Self-Raising Flour, and mix well. Add Mackerel and Cheese, and mix to combine. Add extra Flour if required.
- Heat a generous amount of Oil in a frying pan over medium low heat, form thin pancakes, and cook for 2-3 minutes OR until nicely browned and crispy, then flip over and cook the other side.
