On a hot summer day, I often want to eat something refreshing as well as spicy and garlicky. Here is one invention of cucumber salad. Cooked prawns or squid would be nice for this dish.

Ingredients
Cucumber 1 large continental cucumber or 2 Lebanese cucumbers
Red Onion 1/2 to 1
Dressing
Rice Vinegar 1 tablespoon
Sesame Oil 1 tablespoon
White Miso 1 tablespoon
Soy Sauce 1/2 tablespoon
Toasted Sesame Seeds 2 tablespoons *ground
Garlic 1 to 2 cloves *grated
Toban Djan (Chili Bean Sauce) 1 teaspoon
Sugar 1 teaspoon
Method
- Cut Cucumber in quarters lengthways and cut diagonally. Slice Red Onion thinly.
- Make dressing by combing all ingredients and mixing well.
- Add the dressing to the vegetables and mix well.
