I found a bag of Dried Cranberries in the pantry after I purchased a bag of Dried Cranberries to make a cake. I decided to make the old ones into a compote. A compote can be made by cooking Fruit in water with sugar. Spices and Flavours such as Citrus Peel can be added. Once sweet and soft, these Cranberries can be added to Ice Cream, Yoghurt, OR your favourite dessert. It’s a good way to use up your leftover Dried Fruit.
Ingredients
100g Dried Cranberries
1/2 cup Water
1/2 cup Orange Juice *OR extra Water
2 to 4 tablespoons Sugar *alter the amount to suit your taste
Orange Peel *optional
1 to 2 teaspoons Grand Marnier *optional
Method
- Place Dried Cranberries in a saucepan, pour boiling water, then drain. *Note: This process is to remove unwanted oil coating around Dried Cranberries. It might be unnecessary.
- Return the Cranberries to the saucepan, add Water, Orange Juice and Sugar. Most Dried Cranberries are sweetened, but if not, you might need extra Sugar. Add some pieces of Orange Peel if you have.
- Simmer over low heat for 15-20 minutes OR until Cranberries are soft and the liquid is syrupy. Add Grand Marnier and mix to combine, but it is optional as it is alcoholic.

Hi Liz. I am not sure. Please weigh the Dried Cranberries. The product I usually buy is a bag of 150g Dried Cranberries and 100g is 2/3 of it. If you don’t have a kitchen scale, use about 100g. It doesn’t need to be precisely 100g.
