When I bought a bag of orange-flavoured dried cranberries by mistake, this recipe was made. These muffins have excellent orange fragrance. The key ingredient is the Macadamia. The crunchy texture of Macadamia can’t be replaced by anything else, but you can use other nuts that you like.

12 Muffins

Ingredients

2 cups Self-Raising Flour
1/2 cup Caster Sugar
2 Eggs
100g Butter *melted
1/2 to 2/3 cup Milk
Zest of 1 Orange *finely grated
1 cup Dried Cranberries
Macadamia Nuts *2 to 3 for each muffin

Method
  1. Preheat oven to 180℃. Line a 12-hole medium-size muffin tin with paper cases.
  2. Combine Flour and Sugar in a large bowl. Add Eggs, Butter, Milk and Orange Zest and mix well. Add Cranberries and fold together until well combined.
  3. Spoon the mixture into paper cases. Place 2 to 3 Macadamia Nuts for each and push them into the mixture.
  4. Bake for about 20 minutes or until golden and cooked through. Leave in tins for 5 minutes before moving onto wire rack to cool.
