I have one Basic Cookie Dough recipe that I have been using for decades. I don’t need to know other recipes because this recipe works for me and I like the sweetness and texture of this cookie dough. You can add extra ingredients to this dough and make many different cookies. Possibilities are endless. Today I added Dried Cranberries and White Chocolate Chips, which were quite sweet. I could have reduced the amount of Sugar even though I added only 1/2 cup, that was 80g. Many recipes require 120g or 150g or more Sugar. I can’t stand the extreme sweetness.

Ingredients

125g Butter *softened
1/2 cup Caster Sugar
1 large Egg
1 teaspoon Vanilla Extract
1 & 3/4 cup Self-Rising Flour
1/2 cup White Chocolate Chips
1/2 cup Dried Cranberries

Method
  1. Beat softened Butter and Sugar until smooth and well combined. Beat in Egg and Vanilla, and mix well until creamy. Add Flour and mix well, then add White Chocolate Chips and Dried Cranberries, and combine evenly.
  2. Roll the dough into 24 balls, about 3cm size, and place on the tray(s) lined with baking paper.
  3. Bake in the preheated oven at 180℃ for 15 to 20 minutes. Cool on a wire rack.
