This is my ‘Basic Cookie Dough’ recipe that I have been using for many decades. Adding extra ingredients, such as Chocolate Chips, Nuts and Dried Fruit, and also flavours such as Cinnamon, Cocoa Powder, Matcha Powder, Lemon Zest & Juice, Coffee Granules, you can create a variety of cookies. It is easy to remember and absolutely versatile recipe.

Ingredients
125g Butter *softened
1/2 cup Caster Sugar
1 large Egg
1 teaspoon Vanilla Extract
1 & 3/4 cups Self-Rising Flour *OR 1 & 1/2 cups for flatter cookies
Method
- Beat softened Butter and Sugar until smooth and well combined. Beat in Egg and Vanilla, and mix well until creamy. Add Flour and mix well.
- *Note: If you reduce the amount of Flour, the dough can be soft and sticky. Cool in the fridge until firm enough to roll.
- Roll the dough into 24 balls, about 3cm size, and place on the tray(s) lined with baking paper. Bake in the preheated oven at 180℃ for 15 to 20 minutes. Cool on a wire rack.
