This is my ‘Basic Cookie Dough’ recipe that I have been using for many decades. Adding extra ingredients, such as Chocolate Chips, Nuts and Dried Fruit, and also flavours such as Cinnamon, Cocoa Powder, Matcha Powder, Lemon Zest & Juice, Coffee Granules, you can create a variety of cookies. It is easy to remember and absolutely versatile recipe.

Ingredients

125g Butter *softened
1/2 cup Caster Sugar
1 large Egg
1 teaspoon Vanilla Extract
1 & 3/4 cups Self-Rising Flour *OR 1 & 1/2 cups for flatter cookies

Method
  1. Beat softened Butter and Sugar until smooth and well combined. Beat in Egg and Vanilla, and mix well until creamy. Add Flour and mix well.
  2. *Note: If you reduce the amount of Flour, the dough can be soft and sticky. Cool in the fridge until firm enough to roll.
  3. Roll the dough into 24 balls, about 3cm size, and place on the tray(s) lined with baking paper. Bake in the preheated oven at 180℃ for 15 to 20 minutes. Cool on a wire rack.
