Today I made these cookies to use up leftover Dates and Walnuts, which had been sitting in my pantry for a long time. I used my Basic Cookie Dough, but I reduced the amount of Flour as I wanted to add a lot of Walnuts and Dates. The cookies were really delicious and very sweet because I added a lot of Dates.

1/4 cup Brown Sugar
1/4 cup Caster Sugar
1 Large Egg
1 teaspoon Vanilla Extract

  3. Roll the dough into 24 balls, about 3cm size, and place on the prepared trays, 12 balls each. You may wish to press down slightly.
