‘Pork Shogayaki’ (Ginger Pork) is a very popular Japanese dish, and it can be enjoyed with freshly cooked Rice, Spaghetti OR Noodles. Today I cooked this Udon dish. If you have already cooked Udon and thinly sliced Pork, it’s absolutely quick and easy to make.

Ingredients

1 serving Cooked Udon
100g thinly sliced Pork *cut into bite-size pieces
1/4 Onion *thinly sliced
1 teaspoon Oil
Chilli Flakes as required
Finely chopped Spring Onion
Shichimi (Japanese Chilli Spice Mix) *optional

Sauce
1/2 to 1 teaspoon grated Ginger
1 tablespoon Soy Sauce
1/2 tablespoon Mirin
3 tablespoons (45ml) Water
1/8 teaspoon Dashi Powder

Method
  1. Combine all the Sauce ingredients in a small bowl.
  2. Heat Cooked Udon in boiling water until soft.
  3. Heat Oil in a frying pan over medium heat, cook Onion and Chilli Flakes for a minute. Add Pork, stir until colour changes, then add the Sauce, and bring back to the boil.
  4. Drain the heated Udon, add to the pan, and stir to combine. Sprinkle with some finely chopped Spring Onion and Shichimi (optional), and enjoy.
