Using left-over cooked rice, I often make Onigiri. For seasoning, I use only Salt. Sometimes I grill them after brushing with some mixture of Soy Sauce and Mirin and make the outside slightly burnt. It is yummy! And this one with Miso Sauce is even yummier!

6 to 8 Rice Balls

Ingredients

500 to 600g Cooked Rice (Japanese Short Grain Rice)
Salt
1 tablespoon Miso
1/2 tablespoon Mirin
1/2 to 1 teaspoon Sugar
*Optional Ingredients: Sesame Seeds, finely chopped Spring Onion, Ginger, Shiso, Basil, etc.

Method
  1. In a small bowl, mix Miso, Mirin and Sugar (and optional other ingredients) to make miso sauce.
  2. Make Onigiri. Find how to make ‘Triangular Onirigi’.
  3. Spread some miso sauce on one side of each Onigiri.
  4. Line a baking tray with aluminium foil and brush the foil lightly with Sesame Oil. Place Onigiri on the foil and grill until the miso sauce is slightly burnt.
