Mackerel is my favourite fish and I particularly love John West’s canned Mackerel in Brine. Anything with the Mackerel in it is delicious to me, though my husband says it smells fishy. So I cooked this Mackerel Fried Rice just for me. This is a very simple fried rice, quick and easy, and absolutely delicious. If you have cooked fresh Mackerel fillets, that would be even better.

Ingredients
1 can (125g) Mackerel in Brine *drained and broken into bite-size pieces
*Note: Cooked fresh Mackerel fillets can be used.
1 Egg *lightly whisked
1 Spring Onion *finely chopped
2 teaspoons Oil *I used 1 teaspoon of each Vegetable Oil and Sesame Oil
1 small clove Garlic *finely chopped
1 serving warm Cooked Rice *about 180g
1/4 teaspoon Salt
White Pepper
1/2 teaspoon Soy Sauce *alter the amount to suit your taste
Method
- Prepare everything before you started cooking.
- Heat Oil and Garlic in a frying pan over medium high heat. When aromatic, add Egg, then add Rice and Spring Onion, and stir to combine.
- Season with Salt and White Pepper, add Mackerel, and mix to combine. Add a small amount of Soy Sauce, and mix well.
