Choy Sum can be substituted with other Asian greens such as Bok Choy, and you can add extra ingredients such as Asian Mushrooms. Just cook Rice and ingredients in Chicken Stock, and you don’t need to stir-fry ingredients with oil. This healthy and satisfying rice soup is super easy to cook.

Ingredients

1 Chicken Fillet *about 120g, cut into small pieces
2 servings (about 240g) Cooked Rice *cold and hardened Rice is OK
2 cups Chicken Stock *OR 2 cups Water & 2 teaspoons Asian Chicken Bouillon Powder
1 tablespoon Sake (Rice Wine)
1 to 2 teaspoons Soy Sauce
80g Choy Sum *cut into small pieces
Salt & White Pepper
Toasted Sesame Seeds *optional
Crispy Chilli Oil *optional

Method
  1. Place Chicken Stock, Sake (Rice Wine), Soy Sauce and Cooked Rice in a saucepan, heat over medium heat, and bring to the boil. Lower the heat and simmer until Rice is soft. By then, the Rice has sucked up a lot of soup.
  2. Add Chicken and Choy Sum, and cook until Chicken is cooked and Choy Sum is soft. Season with Salt & White Pepper.
  3. Add some Toasted Sesame Seeds OR Crispy Chilli Oil, I added both, and enjoy hot.
