
This is the third time I cooked this quick and easy soup of Iceberg Lettuce. Every time I cooked it, I used more Lettuce than last time. Today I added 150g and it looked too much, but it was not. I could have added more. That’s because the volume of Iceberg Lettuce is reduced significantly when cooked. I like to add thinly sliced Pork to this soup, but you can add Chicken OR Beef. This is a very filling soup, but fairly low in calories.

Ingredients
80g thinly sliced Pork *cut into bite-size pieces
1 tablespoon Dry Cut Wakame
150g Iceberg Lettuce *torn into small pieces
1 Spring Onion *thinly chopped
Soup
1 cup Chicken Stock *OR 1 cup Water & 1 teaspoon Asian Chicken Bouillon Powder
1 small piece Ginger *grated
1 small clove Garlic *grated, optional
A few drops Sesame Oil
1/4 teaspoon Salt *OR as required
Ground Pepper as required
Method
- Place all the Soup ingredients in a saucepan, and bring to the boil. Add Pork pieces. When Pork changed the colour, add Dried Cut Wakame and stir.
- Add Iceberg Lettuce and Spring Onion, and cook until Lettuce is softened. Add extra ground Pepper and enjoy.
