This is the third time I cooked this quick and easy soup of Iceberg Lettuce. Every time I cooked it, I used more Lettuce than last time. Today I added 150g and it looked too much, but it was not. I could have added more. That’s because the volume of Iceberg Lettuce is reduced significantly when cooked. I like to add thinly sliced Pork to this soup, but you can add Chicken OR Beef. This is a very filling soup, but fairly low in calories.

Ingredients

80g thinly sliced Pork *cut into bite-size pieces
1 tablespoon Dry Cut Wakame
150g Iceberg Lettuce *torn into small pieces
1 Spring Onion *thinly chopped

Soup
1 cup Chicken Stock *OR 1 cup Water & 1 teaspoon Asian Chicken Bouillon Powder
1 small piece Ginger *grated
1 small clove Garlic *grated, optional
A few drops Sesame Oil
1/4 teaspoon Salt *OR as required
Ground Pepper as required

Method
  1. Place all the Soup ingredients in a saucepan, and bring to the boil. Add Pork pieces. When Pork changed the colour, add Dried Cut Wakame and stir.
  2. Add Iceberg Lettuce and Spring Onion, and cook until Lettuce is softened. Add extra ground Pepper and enjoy.
