When you crave a cake, a Mug Cake is quick and easy to make. It actually takes only a few minutes. After I found someone tried my ‘Chocolate Mug Cake (No Chocolate)’ recipe and shared a photo of it on Cookpad, I decided to make it for myself. I replaced a half of Cocoa Powder with Instant Coffee Granules, and the result was a lovely ‘Mocha Mug Cake’.
Makes
1 Serving *I used 380ml mug
Ingredients
1 tablespoon Butter *1 tablespoon is 15ml
2 tablespoons Brown Sugar *OR White Sugar
1 very small pinch Salt
1/2 tablespoon Instant Coffee Granules
1/2 tablespoon Cocoa Powder
1/2 teaspoon Vanilla Extract *OR Rum, Brandy, etc.
1 Egg
3 tablespoons Self-Raising Flour
Chocolate OR Chocolate Chips *optional
Cream, Sour Cream OR Ice Cream to serve
Method
- Place Butter and Brown Sugar in a mug, microwave for 20-30 seconds OR until Butter melts. Add Salt, Instant Coffee Granules, Cocoa Powder and Vanilla, mix well.
- Add Egg and mix well, then add Self-Raising Flour, and mix well until smooth. Add a few pieces of Chocolate OR some Chocolate Chips on top if you wish to do so.
- Microwave for 60 to 90 seconds OR until cooked. Try not to over-cook it as the cake turns hard and dry. I used 1000W microwave and cooked for 70 seconds. Slightly undercooked is better than overcooked.
- Enjoy with Cream, Sour Cream OR Ice Cream.
