
Pizza is an Italian food, but it has been introduced into many countries, and unique localised Pizzas have developed. In Japan, you might come across ‘Teriyaki Chicken Pizza’. The other day, I head about Eel Pizza that is made with ‘Kabayaki’ Eel. I tried to make it using my ‘Teriyaki Chicken Pizza’ recipe, just replacing Chicken with ‘Kabayaki’ Eel. It was delicious! Many Asian grocery stores sell frozen ‘Kabayaki’ Eel. If you can find it, this Pizza is easy to make.

Ingredients
1 Pizza Base *I used 28cm base

Topping
2 to 3 tablespoons Japanese Mayonnaise
1 fillet (about 200g) ‘Kabayaki’ Eel *thawed if frozen
2 tablespoons finely chopped Onion
100g Mozzarella Cheese OR Pizza Blend Cheese *shredded or torn into small pieces
1/4 sheet Toasted Nori *cut into fine strips
Method
- Preheat the oven to 220°C.
- ‘Kabayaki’ Eel is most likely covered with the sauce that can be slimy. I recommend to rinse off the sauce under cold water and dry with paper towel. Cut in half lengthways, and cut into bite-size pieces.
- Thinly spread Japanese Mayonnaise over the Pizza Base. Arrange Eel pieces, scatter finely chopped Onion and Mozzarella (OR Pizza Blend Cheese).

- Bake for 15 to 20 minutes or until nicely browned. Sprinkle with shredded Toasted Nori and enjoy. *Note: Make sure the baking surface is hot to achieve crispy bottom.
