
I often make these Chicken Bites using Shiso. However, Shiso is not easy to find for many people. It is impossible for me to buy it from stores, so I grow Shiso at home. Anyway, this recipe is easy for everyone because it uses Basil, dry OR fresh. Today I used Dry Basil, but you can use fresh ones from your garden. As the mixture is too soft to roll, you cook these bites just like making small pancakes.

Ingredients
500g Chicken Mince
1 cloves Garlic *grated
Zest of 1 Lemon *finely grated
2 tablespoons Lemon Juice
2 teaspoons Dry Basil *OR a handful fresh Basil Leaves, thinly sliced
1 Egg
1/2 teaspoon Salt
Ground Pepper OR Chilli
Oil for cooking
Method
- Combine all ingredients very well. Heat a small amount of Oil in a frying pan over medium heat.
- This Chicken mixture is very soft and sticky. As it is difficult to roll into balls, use a spoon to drop bite-size balls on the frying pan. Cook the balls until both sides are nicely browned and cooked though.
