Today I craved a Matcha flavoured cake. If it is just for myself, the quickies and easiest option is a mug cake. I used Cream Cheese instead of Butter, but the flavour of the Cream Cheese was not strong. This cake is not very sweet, so enjoy it with Vanilla Ice Cream, Muscovado Syrup, Maple Syrup, etc.


Makes

1 Serving *I used 380ml mug

Ingredients

60g Cream Cheese *about 1/4 of a block
2 tablespoons Caster Sugar
1 teaspoon Rum *OR a few drops Vanilla Extract
1 Egg
1 teaspoon Matcha Powder
2 to 3 tablespoons Self-Raising Flour *I added 3 tablespoons

Method
  1. Place Cream Cheese in a mug, microwave for 15-20 seconds OR until warm. Add Sugar and Rum, and mix well.
  2. Add Egg and mix well, then add Matcha Powder and Self-Raising Flour, and mix well until smooth.
  3. Microwave for 60 to 90 seconds OR until cooked. I cooked for 80 seconds. It swells a lot, but it will shrink. *Note: Try not to over-cook it as the cake turns hard.
  4. Enjoy with Vanilla Ice Cream, Muscovado Syrup, Maple Syrup, etc.
