The other day I came across a photo of IKEA Meatball dish, that looked so good and I wanted to taste it. It is much quicker and easier for me to make it from scratch than driving to the closest IKEA store. I don’t know if my dish tastes similar to the one I saw in the photo, but it is delicious and very easy to cook.
Makes
4 Servings
Ingredients
1 Onion *finely chopped
1 to 2 teaspoons Oil *plus extra
1/2 cup ‘Panko’ Breadcrumbs *plus extra if required
2 tablespoons Milk
1 Egg
500g Pork & Beef Mince
1/2 teaspoon Salt
1/4 teaspoon Ground Pepper
1/4 teaspoon Ground Nutmeg *optional
Oil for cooking
Finely chopped Chives
Sour Cream Gravy Sauce
40g Butter
4 tablespoons Plain Flour *1 tablespoon is 15ml
400ml Beef Stock *OR 400ml Water and 1 Beef Stock Cube
100ml Sour Cream
Salt & Ground Black Pepper
Method
- I recommend to precook Onion. Heat Oil in a frying pan over medium heat and cook Onion until translucent. *Note: You can cook Onion in the microwave. Combine Onion and Oil in a heat-proof bowl, and heat until translucent. You don’t need to cook until soft.
- Place ‘Panko’ Breadcrumbs in a mixing bowl, sprinkle with Milk, and mix well. Add the cooked Onion, Egg, Pork & Beef Mince, Salt and Pepper (and some Nutmeg as well), and mix to combine.
- Roll the mixture into 3cm size balls. *Note: Put some oil on your hands to work if the mixture is sticky.
- Heat extra small amount of Oil in a frying pan over medium heat, cook Meatballs, in batches if necessary, until nicely browned all over and cooked through.
- Transfer the Meatballs to a serving bowl OR plates. There must be some Oil in the pan. I recommend to discard it. Add Butter in the pan and heat over medium heat. When Butter has melted, add Flour and mix well.
- Add Beef Stock, stir until the sauce thickens, add Sour Cream, mix well, and season with Salt & Pepper.
- Pour the sauce over the Meatballs, scatter some finely chopped Chives, and serve with mashed potatoes, pasta, or vegetables.
