The other day I came across a photo of IKEA Meatball dish, that looked so good and I wanted to taste it. It is much quicker and easier for me to make it from scratch than driving to the closest IKEA store. I don’t know if my dish tastes similar to the one I saw in the photo, but it is delicious and very easy to cook.

Ingredients

1 Onion *finely chopped
1 to 2 teaspoons Oil *plus extra
1/2 cup ‘Panko’ Breadcrumbs *plus extra if required
2 tablespoons Milk
1 Egg
500g Pork & Beef Mince
1/2 teaspoon Salt
1/4 teaspoon Ground Pepper
1/4 teaspoon Ground Nutmeg *optional
Oil for cooking
Finely chopped Chives

Sour Cream Gravy Sauce
40g Butter
4 tablespoons Plain Flour *1 tablespoon is 15ml
400ml Beef Stock *OR 400ml Water and 1 Beef Stock Cube
100ml Sour Cream
Salt & Ground Black Pepper

Method
  1. I recommend to precook Onion. Heat Oil in a frying pan over medium heat and cook Onion until translucent. *Note: You can cook Onion in the microwave. Combine Onion and Oil in a heat-proof bowl, and heat until translucent. You don’t need to cook until soft.
  2. Place ‘Panko’ Breadcrumbs in a mixing bowl, sprinkle with Milk, and mix well. Add the cooked Onion, Egg, Pork & Beef Mince, Salt and Pepper (and some Nutmeg as well), and mix to combine.
  3. Roll the mixture into 3cm size balls. *Note: Put some oil on your hands to work if the mixture is sticky.
  4. Heat extra small amount of Oil in a frying pan over medium heat, cook Meatballs, in batches if necessary, until nicely browned all over and cooked through.
  5. Transfer the Meatballs to a serving bowl OR plates. There must be some Oil in the pan. I recommend to discard it. Add Butter in the pan and heat over medium heat. When Butter has melted, add Flour and mix well.
  6. Add Beef Stock, stir until the sauce thickens, add Sour Cream, mix well, and season with Salt & Pepper.
  7. Pour the sauce over the Meatballs, scatter some finely chopped Chives, and serve with mashed potatoes, pasta, or vegetables.
