
I often make a rice bowl for my lunch, and I most frequently use a small can of Fish to make it. Tuna, Sardines and Salmon are the regulars, but my favourite is Mackerel. Today I seasoned it with Miso and Mayonnaise. I ate it with freshly cooked Rice. Such a quick and easy dish, very nutritious, and absolutely delicious.

Ingredients
1 can (*125g) Mackerel In Brine *drained, broken into bite-size pieces
1/8 to 1/6 Onion *very thinly sliced
1 small piece Ginger *grated, about 1 teaspoonful
1 teaspoon White Miso
1 tablespoon Japanese Mayonnaise
1 serving warm Cooked Rice
Finely chopped Spring Onion
Shichimi (Japanese Chilli Spice Mix)
Method
- If Onion is too peppery, rinse under cold water, then drain well.
- Combine grated Ginger, White Miso and Japanese Mayonnaise in a small bowl, add Mackerel and Onion, and mix to combine.
- Half fill a bowl with warm Cooked Rice and cover it with the Mackerel & Onion mixture. Add some Spring Onion and Shichimi (Japanese Chilli Spice Mix), and enjoy.
