
This is basically the same recipe as my ‘Easy Focaccia’. Today I halved the recipe to cook it in a frying pan. Even though you don’t have an oven, you can entertain your friends and gruests with a home-made Focaccia. My frying pan is 26cm in diameter. Please use similar size OR larger pan. Of course, you can bake it in the oven if you prefer.

Ingredients
1 & 1/2 cups Bread Flour *Note: Plain Flour can be used
1 teaspoon Dry Yeast
1 & 1/2 teaspoons Sugar
1/2 teaspoon Salt *plus extra
1 cup Warm Water
1 tablespoon Olive Oil *plus extra
Optional Garlic & Herb Oil
1 tablespoon Olive Oil *melted Butter can be used instead
1 clove Garlic *grated
1 teaspoon Dried Herbs *I used Italian Herb Mix
Method
- Place Flour, Dry Yeast, Sugar and Salt in a mixing bowl, and use a spatula to combine, add Warm Water and Olive Oil, and stir well. The dough is very soft and gooey. Cover and set aside in a warm place for 15 minutes.
- After 15 minutes, wet your hand with water, grab an edge of the dough, lift and bring it to the centre. Repeat several times. If the dough is too soft, use a spatula to do this. Cover and rest for 15 minutes again.
- After 15 minutes, repeat the process. This time, you should be able to use your hand. Cover and set aside in a warm place for 30 minutes OR until doubled in size.
- While you are waiting, make ‘Garlic & Herb Oil’ if you want to add it. Just mix all ingredients.
- Drizzle 1 tablespoon Olive Oil over the dough, gently coat the dough with the Oil, then turn it out on the fraying pan.


- Drizzle extra 1 tablespoon Olive Oil over the dough, and dimple it, using your fingers. Make sure the dough is in even thickness.

- Cook the dough over medium to low heat for 8 to 10 minutes, then flip it over using a plate, and cook the other side for 8 to 10 minutes. If it is getting brown too quickly, lower the heat. You can flip it over a few times. *Note: Covering with a lid can help the cooking process.
- When cooked, transfer to a plate, spread the ‘Garlic & Herb Oil’ on top evenly, sprinkle with some Salt, and serve.
- *Note: You can bake this Focaccia in the preheated oven at 220℃ for 15 minutes OR until browned and cooked.
