It was when I was looking at an American news site. There was an article about American Summer Fete Foods, and my eyes were glued on one food. It was a slice of Pizza and the topping was Pickled Cucumber. I wanted to taste it and searched for recipes. It seems many people use Sour Cream and Mayonnaise for the sauce. Today I tried to make it using my ‘Easy Pizza Base’ and the Pizza was absolutely delicious! I swear whoever invented this Pizza was genius. If you love Pickled Dill Cucumber, you got to try this Pizza.


Makes

1 X 28cm Pizza

Ingredients

Pizza Base
1 & 1/4 cups Bread Flour *OR Plain Flour
1/2 teaspoon Dry Yeast
1/8 teaspoon Sugar
1/4 teaspoon Salt
1/2 cup Warm Water
1/2 tablespoon Olive Oil *OR Oil of your choice

Sauce
2 tablespoons Sour Cream
1 tablespoon Mayonnaise
1 tablespoon chopped Dill
1 small clove Garlic *grated
1 pinch Salt

Topping
1 cup shredded Pizza Cheese Mix *OR Cheese of your choice
1 to 2 Pickled Dill Cucumbers *about 100g, sliced to 2-3mm thin
Chopped Dill

Method
  1. To make Pizza Base, combine all dry ingredients in a mixing bowl, add WARM Water and Oil, mix well, and knead until smooth and elastic. Cover and set aside in a warm place for 30 minutes, then flatten the dough and stretch out into a round.
  2. Preheat the oven to 220°C.
  3. Combine all the Sauce ingredients and spread over the Pizza Base. Cover with shredded Cheese evenly, arrange Pickled Cucumber slices.
  4. Bake for 15 to 20 minutes OR until nicely browned. Scatter some chopped Dill and enjoy. *Note: Make sure the baking surface is hot to achieve crispy bottom.
