Grated Carrot is often used for sweet pancakes. I tried to make a savoury pancake today. The pancake turned very sweet because Carrot turns sweet when cooked. Carrot might be more suitable for sweet pancakes, but this savoury pancake was actually delicious with Japanese Mayonnaise OR salty sauce such as Kimchi Flavoured Sauce. If you have a lot of Carrot, you may wish to try this.

Ingredients

1 Carrot *Today it weighed 120g
1/4 teaspoon Salt *increase if you add more Carrot
1/8 teaspoon Ground Pepper
1 Egg
4 tablespoons Plain Flour
Oil for cooking

Method
  1. Cut Carrot into thin strips. Using a vegetable slicer, it can be done easily. Place in a mixing bowl, add all other ingredients except Oil, and mix well.
  2. *Note: You can add as much as Carrot as you want if you can combine all together.
  3. Heat a small amount of Oil in a frying pan over medium heat, form a pancake spreading the mixture thinly, and cook until both sides are nicely browned.
  4. Enjoy with your favourite sauce. My favourite is Japanese Mayonnaise with Ground Chilli. Soy Sauce with Chilli is also good. Kimchi Flavoured Sauce is very good. OR you would like to eat it with Sour Cream.
