Today I cooked Fried Tofu with Pork Mince in the way similar to my ‘Mabo Dofu Japanese Style’. Pork Mince can be thinly sliced Pork, OR you may prefer Chicken OR Beef instead. The main ingredient is Fried Tofu that is quite meaty. This is a very satisfying dish that can be enjoyed with freshly cooked Rice.

Ingredients

500g Fried Tofu *cut into bite-size pieces

1/2 tablespoon Sesame Oil
250g Pork Mince
1 clove Garlic *finely chopped
1 small piece Ginger *finely chopped OR grated
1 tablespoon Potato Starch *mixed with 1 tablespoon Water
1 to 2 Spring Onions *finely chopped, save some for topping

Sauce
1 cup Chicken Stock *OR 1 cup Water & 1 teaspoon Asian Chicken Bouillon Powder
1 tablespoon Soy Sauce
1 tablespoon Oyster Sauce *OR Soy Sauce
1/2 tablespoon Toban Djan (Chili Bean Sauce) *add more if you like
1/2 tablespoon Sugar *optional
1 tablespoon Rice Vinegar

Method
  1. Combine all the Sauce ingredients in a measuring jug OR small bowl.
  2. Heat Sesame Oil in a frying pan over medium heat, cook Pork Mince, Garlic and Ginger. When Pork Mince is cooked, add Fried Tofu pieces and the Sauce, bring to the boil, and simmer for 1 minute.
  3. Mix Potato Starch and Water, then gradually add it to the boiling sauce, constantly stirring, and cook until the sauce is thickened. Add Spring Onion and mix to combine.
  4. Sprinkle with the saved Spring Onion on top and enjoy with freshly cooked Rice.
