‘Miso Soup’ is just a soup that is seasoned with Miso. Ingredients can be anything you like. Dashi Stock is traditionally used, but there are various opinions. You can use any soup stock that you like. Here is an untraditional Miso Soup of Smoked Sausages for you to try.

Ingredients

2 cups Soup Stock of your choice *Today I used Unsalted Chicken Stock
1-2 Potatoes
1-2 Smoked Sausages *e.g. Kransky Sausages, about 150g
2 Cabbage Leaves
1 to 2 tablespoons Miso *Today I used 1 heaped tablespoon of White Miso
1 Spring Onion *finely chopped

Method
  1. Cut Potatoes, Sausages and Cabbage Leaves into bite-size pieces.
  2. Place the soup stock of your choice and the ingredients in a saucepan, and cook over medium heat until soft.
  3. Season with Miso.
  4. *Note: The important point to remember is that you should remove the soup from the heat before it starts to boil after adding Miso. If you boil the soup for too long, the wonderful aroma of Miso will be lost.
  5. Sprinkle with finely chopped Spring Onions and enjoy.
