Last night, my family enjoyed Fish & Chips. The fried fish and chips were light and crispy, and absolutely delicious. We ordered medium size chips, but the serve was so generous and we couldn’t finish them. Don’t throw away leftover chips! There are many ways to enjoy them on the next day. This is a simple stir-fry. I added Chicken today, but you can use other meat. The sour sauce is the key of this dish.

Ingredients

200g Chicken, Pork OR Beef, etc.
*Note: Chicken OR other meat needs to be thinly sliced, cut into bite-size pieces, OR minced meat is quick and easy to use.
1 clove Garlic *finely chopped
1 teaspoon Oil *I used Sesame Oil
About 200g Leftover Chips
Salt
1 thick Spring Onion *diagonally sliced
Shichimi (Japanese Chilli Spice Mix) *optional

Sauce
1/2 tablespoon Sugar
1 tablespoon Soy Sauce
1 tablespoon Mirin
1 tablespoon Rice Vinegar
Chilli Flakes as required

Method
  1. Combine all the Sauce ingredients in a small bowl.
  2. Heat a small amount of Oil in a frying pan over medium heat, cook Chicken OR other meat with Garlic.
  3. Add Leftover Chips, cook, tossing and mixing, until Chips are hot, lightly season with Salt.
  4. Add Spring Onion, mix to combine, then add the Sauce. Once everything is combined, it is done. Add some Shichimi (Japanese Chilli Spice Mix) for extra flavour and enjoy.
