When I had some left over roasted potatoes on the other day, I cooked them in a sweet soy sauce. The cold roasted potatoes were reborn in the Japanese flavour. Then I invented this dish. Cut the potatoes into small cubes and pre-cook them in the microwave so that you can save the cooking time. Alternatively you can roast the potatoes. Sweet potato version is also very nice. Great nibbles with beer.

Ingredients

Potatoes 4 *can be replaced with 2 Sweet Potatoes
Oil 1 tablespoon
Salt

Teriyaki Sauce Ingredients

Sugar 1 tablespoon
Soy Sauce 2 tablespoons
Mirin 1 tablespoon

Frying Pan Method
  1. Peel Potatoes and cut into small cubes. Places the potato pieces in a heat-proof large mixing bowl and add a pinch of Salt, then cook in the microwave for 2 minutes, toss them so that they cook evenly, cook another 2 minutes. Repeat if necessary, but they don’t need to be very tender.
  2. Make Teriyaki Sauce by mixing all ingredients in a small bowl.
  3. Heat Oil in a frying pan over a medium heat, cook the potato pieces until golden and crispy outside and tender inside, add the sauce and let them combine well. Sprinkle with some Shichimi (Japanese chilli spice mix) or Toasted Sesame Seeds and serve hot.
Oven Method
  1. Preheat oven to 200C. Place baking sheet on the oven tray or lightly oil the tray.
  2. Peel Potatoes and cut into small cubes. Places the potato pieces in a large mixing bowl and sprinkle Oil and a pinch of Salt over, and toss them to coat evenly.
  3. Lay potato pieces on the tray and bake for 20 minutes or until cooked through.
  4. Make Teriyaki Sauce by mixing all ingredients in a small bowl.
  5. Remove potato pieces from oven and place them in a hot frying pan, add the sauce and let them combine well. Sprinkle with some Shichimi (Japanese chilli spice mix) or Toasted Sesame Seeds and serve hot.
