I have been using a lot of Parsley for cooking lately. The other day I cooked Asian flavoured ‘Parsley Pancake’. Today I cooked Potato Pancakes and I added a lot of Parsley to the mixture. It was delicious. I added firmly packed 1/2 cupful Parsley, which looked too much, but surprisingly Parsley flavour was not overwhelming. I think I could add more.


Makes

4 x 10cm Pancakes

Ingredients

1 Potato *about 160g
1/4 Onion *thinly sliced
1/2 cupful chopped Parsley *OR add as much as you want
1 Egg
1/4 teaspoon Salt
Ground Pepper as required
1/4 cup Self-Raising OR Plain Flour *plus extra
1/4 cupful shredded Cheese or your choice
Oil for cooking

Method
  1. Peel Potato and coarsely grate it. Remove excess water and place in a mixing bowl.
  2. Add thinly sliced Onion, Parsley, Egg, Salt and Pepper, and mix to combine. Then add Flour and Cheese, and mix well. Add extra Flour if required. *Note: The ingredients need to be just combined.
  3. Heat a generous amount of Oil in a frying pan over medium low heat, form THIN pancakes, and cook for 2-3 minutes OR until nicely browned and crispy, then flip over and cook the other side.
  4. Enjoy with your favourite Sauce. Today I enjoyed with Ketchup.
