In Japan, when we make cucumber salad, we often gently bash the cucumber before cutting it, so that the centre gets slightly squashed and softened, and the cucumber pieces get seasoned better. 1 large Continental Cucumber OR 2 Lebanese Cucumbers *about 300g
1/2 teaspoon Salt
1/2 teaspoon grated Garlic
1 teaspoon Rice Vinegar
2 teaspoons Sesame Oil
2 teaspoons Toasted Sesame Seeds *lightly ground

  1. Wash Cucumber and place it on the cutting board. Use a rolling pin to bash gently until it cracks. Break or cut it into bite-size pieces.
  2. Sprinkle Salt and massage, then set aside a few minutes.
  3. Add Garlic, Rice Vinegar, Sesame Oil and lightly ground Toasted Sesame Seeds to the cucumber. Combine well and serve immediately.
