Once I bought this salad from a store and fell in love with it. There are many different ‘Carrot & Raisin Salad’ recipes but I have found many of them too sweet. Carrot is a quite sweet vegetable and Raisins are very sweet. You don’t need to add much sugar, honey or syrup. I have found a spoonful of Orange Marmalade adds the enough sweetness and a subtle orange flavour to the salad.

Large Carrots 3 *shredded
Raisins OR Sultanas 1/4 cup
White Wine Vinegar 1 tablespoon
Olive Oil 1 tablespoon
Dijon Mustard 1 teaspoon
Orange Marmalade 1 to 2 teaspoons
Salt 1/4 teaspoon

  1. Peel the skin of Carrots if you prefer, then shred using a grater. Alternatively slice them into fine strips.

  2. Combine everything in a large bowl.
