Once I bought this salad from a store and fell in love with it. There are many different ‘Carrot & Raisin Salad’ recipes but most of them are too sweet for me. Carrot is a sweet vegetable and Raisins are very sweet. You don’t need to add much Sugar, Honey or Maple Syrup. I have found a spoonful of Orange Marmalade adds the enough sweetness and a subtle orange flavour to the salad.

Ingredients

3 large Carrots *shredded
1/4 cup Sultanas, Raisins OR Cranberries
1 tablespoon White Wine Vinegar
1 tablespoon Olive Oil
1 teaspoon Dijon Mustard
1/4 teaspoon Salt
1 to 2 teaspoons Orange Marmalade

Method
  1. Peel the skin of Carrots if you prefer, then shred using a grater. Alternatively slice them into fine strips.
  2. Combine everything in a large bowl.
