I had one sheet Puff Pastry in freezer for a while and I needed to use it. I decided to make this yummy snack. This is a super easy version of Australian Vanilla Slices. It’s a little bit messier to eat, but they taste almost the same. Thick Custard can be replaced with Whipped Cream, Azuki Paste, Jam, Nut Spread, etc.

Ingredients

1 sheet Puff Pastry *thawed
2 to 3 Egg Yolks
3 to 4 tablespoons Sugar
2 tablespoons Plain Flour
1 teaspoon Vanilla Extract
1 cup Milk *warmed
1 teaspoon Icing Sugar for dusting

Method
  1. Make Vanilla Custard first. Place Egg Yolks and Sugar in a saucepan and mix well. Add Flour and mix well. Add warmed Milk and mix well. Cook over a medium to low heat, stirring constantly until custard comes to the boil and thickens. Allow to cool.
  2. *Note: Custard can be quickly made in the microwave. Find how to make it here.
  3. Cut Puff Pastry sheet into 3-4cm squares. Place on a baking tray, and bake in the oven at 180℃ for 10 to 12 minutes or until golden. Transfer to a wire rack to cool.
  4. Sandwich Custard with 2 pieces of Puff Pastry. Dust with Icing Sugar.
