This is a variation of my ‘Custard Jelly with Caramel Sauce’. Reduce the amount of Milk for slightly firmer texture, and jelly is set in ramekin OR mug with flat base. Instead of making Caramel Sauce, I made Caramel first. If you have microwave, it is easy to do. Then I poured the jelly mixture over the hardened Caramel. It is as tasty as Creme Caramel, but it is much easier to make as it is a jelly.

Ingredients

Caramel
2 tablespoons Caster Sugar *1 tablespoon for each
2 teaspoons Water *1 teaspoon for each

Custard Jelly
1 teaspoon Gelatine Powder
1 tablespoon Water
200ml Milk
2 Egg Yolks
2 tablespoons Caster Sugar
1/2 teaspoon Vanilla Extract

Method
  1. Spread 1 tablespoon Caster Sugar in each ramekin (OR mug with flat base) evenly, and sprinkle with 1 teaspoon Water. Cook in the microwave, one at a time, until Sugar turns brown. *Note: It takes 1 minute & 20 seconds using my 1100W microwave per ramekin.
  2. Carefully take it out as it is VERY HOT, move the ramekin so that the Caramel turns evenly brown, and set it aside. The caramel hardens as it cools.
  3. Sprinkle Gelatine Powder into Water in a small bowl and soak for a few minutes.
  4. Combine Egg Yolk, Sugar and Vanilla in a mixing bowl with a whisk until creamy.
  5. Heat Milk in a saucepan over medium low heat, bring just to the boil, add the soaked Gelatine, and stir until Gelatine completely dissolves. *Note: This process can be done using a heat-proof jug OR bowl in the microwave.
  6. Gradually add the hot Milk mixture to the Egg Yolk mixture, whisking constantly. The heat of the hot Milk mixture will cook the Egg Yolk, but you may wish to return the mixture into the saucepan, and cook it properly, but DO NOT bring back to the boil.
  7. Pour the mixture over the hardened Caramel in the prepared ramekins (OR mugs). For smoother result, pour it through a fine strainer such as tea strainer. Remove the bubbles on the surface if you want to do so.
  8. When cool enough, place the ramekins in the fridge until the jelly has set completely. Turn the jelly onto a serving plate and enjoy.
