I don’t know about the health benefit of Turmeric very well, but it is fun to cook striking yellow rice using Turmeric. I sometimes cook rice with Saffron when I want to serve yellow coloured rice with curry, but Saffron is quite expensive. Turmeric Rice is just good enough. I recommend not to season the rice with salt too heavily when you serve it with salty curry.

Ingredients

1 tablespoon Oil *e.g. Olive Oil
1/2 Onion *finely chopped
1 clove Garlic *finely chopped
2 cups (*180ml cup) Rice of your choice
*Note: 180ml measuring cup usually comes with the rice cooker because it is commonly used for measuring rice.
Water, Vegetable Stock OR Chicken Stock
1 teaspoon Turmeric
1 Bay Leaf
Salt & Pepper
Parsley *finely chopped

Method
  1. Spread Oil in the rice cooker’s inner pot and scatter finely chopped Onion and Garlic. *Note: Onion and Garlic are optional.
  2. Wash Rice by stirring it thoroughly in water and drain. Spread over the Onion and Garlic.
  3. Add cold Water OR Stock, up to the 2-cups-marking, add Turmeric and Bay Leaf, season lightly with Salt & Pepper, and press ‘COOK’ button to start cooking.
  4. When rice is cooked, let it steamed for 10 minutes. Remove Bay Leaf and mix gently. Sprinkle with finely chopped Parsley when you serve.
