I don’t know about the health benefit of Turmeric very well, but it is fun to cook striking yellow rice using Turmeric. I sometimes cook rice with Saffron when I serve the rice with curry as Saffron makes rice yellow, but it is quite expensive. Turmeric Rice is just good enough. I recommend not to season the rice with salt too heavily when you serve with salty curry.

Ingredients

2 cups (*180ml cup) Rice of your choice
*Note: 180ml measuring cup usually comes with the rice cooker because it is commonly used for measuring rice.
Water, Vegetable Stock OR Chicken Stock
1 teaspoon Turmeric
1 tablespoon (*15g) Butter OR Oil of your choice
Salt & Pepper
1 Bay Leaf
Parsley *finely chopped

Method
  1. Wash rice by stirring it thoroughly in water and drain. Place the rice into the rice cooker’s inner pot.
  2. Add cold Water OR Stock up to the 2-cups-marking. Add Turmeric, Butter (OR Oil) and Bay Leaf. Season lightly with Salt & Pepper, and press ‘COOK’ button to start cooking.
  3. When rice is cooked, let it steamed for 10 minutes. Remove Bay Leaf, loosen and mix gently. Sprinkle with finely chopped Parsley when you serve.
  4. *Optional Ingredients: Cook finely chopped 1/2 Onion and 1 clove Garlic with 1 tablespoon Butter OR Olive Oil, and add the mixture to the rice before cooking.
