When I don’t want to cook anything, particularly on a hot day, a rice bowl made with a canned fish is a go-to dish. Rice can be cooked by rice cooker. Canned Mackerel doesn’t need to be cooked. Egg needs to be cooked but it can be done very quickly using microwave. It took less than 5 minutes for me to prepare this rice bowl.

Ingredients

Mackerel
1 can (125g) Mackerel in Brine *drained
2 teaspoons Miso *I used dark colour type
1 teaspoon Sugar
1 teaspoon Mirin
1/4 teaspoon grated Ginger

Egg
1 Egg
1 pinch Salt
1 teaspoon Mirin

Other Ingredients
1 serving warm Cooked Rice
Finely chopped Spring Onion
Toasted Sesame Seeds

Method
  1. To prepare Mackerel, combine Miso, Sugar, Mirin and grated Ginger in a small bowl, add drained Mackerel, and mix well breaking up the Mackerel into flakes.
  2. To prepare Egg, whisk Egg in a heat-proof bowl, add Salt and Mirin, and mix well. Heat in the microwave until half-cooked. Use a whisk and mix it, breaking up the cooked part, then heat again until cooked. Use the whisk to break up into small pieces.
  3. Half fill a bowl with warm Cooked Rice and cover it with the Egg and Mackerel. Add some finely chopped Spring Onion and Toasted Sesame Seeds, and enjoy.
