When I made ‘Sweet Focaccia with Cinnamon Sugar Topping’, I though I could have added Apple. So I made this Sweet Focaccia with Apple today. I added slightly cooked Pink Lady Apples. I didn’t drizzle Icing and I’m glad I didn’t. This focaccia was sweet enough for me, but you may wish to add Icing and make it sweeter.

Ingredients

2 cups Bread Flour
2 teaspoons (7g) Dry Yeast
2 tablespoons Sugar
1/2 teaspoon Salt
1 cup Warm Water
1 tablespoon Oil *I used Sunflower Oil
3 to 4 Apples
40g melted Butter
1/4 cup Sugar
2 teaspoons Ground Cinnamon

Method
  1. Place Bread Flour, Dry Yeast, Sugar and Salt in a large bowl, and blend well. Add Warm Water and stir using a spatula. Add Oil, and stir very well. The dough is soft and gooey. Cover and set aside in a warm place for 15 minutes.
  2. After 15 minutes, wet your hand with water, grab an edge of the dough, lift and bring it to the centre. Repeat several times. If the dough is too soft, use a spatula to do this. Cover and rest for 15 minutes again.
  3. After 15 minutes, repeat the process. This time, you should be able to use your hand. Cover and set aside in a warm place for 30 minutes OR until doubled in size.
  4. Peel Apples if you wish to do so, cut into 2-3cm pieces, place in a frying pan, add 1-2 tablespoons Water, and cook until just softened. Apple pieces should be fairly firm.
  5. Combine Sugar and Cinnamon in a small bowl. Line a baking tray with baking paper. I used a Swiss Roll Pan (33cm x 23cm). You can use a larger tray, OR a large cake tin.
  6. When the dough is ready, drizzle 1 tablespoon melted Butter, and gently coat the dough with the Butter, then turn it out on the prepared tray OR pan. Drizzle extra Butter over the dough, and form a large oblong as you dimple the dough using your fingers. Make sure the dough is in even thickness. I made the dough about 1cm thick. Spread the remaining Butter over the dough.


  7. Preheat oven to 180°C. Mix Apple pieces and Cinnamon Sugar, spread them over the dough, and arrange the Apple pieces evenly, slightly pressing them down. Wait until oven is hot. By then, the dough will rise more.
  8. Bake for 25 to 30 minutes OR until nicely browned and cooked through. Transfer to a wire rack and cool, OR enjoy it hot.
  9. If you want to add Icing, mix 1/2 cup (60g) Icing Sugar and 2 to 3 teaspoons Milk, and drizzle it over the cooled Focaccia.
