I was craving ‘Korokke’ today, but ‘Korokke’ is not easy to make. I have been cooking low carb dishes for my husband lately, and ‘Korokke’ is off the table. So, I cooked the ‘Korokke’ ingredients for just 1 serving in a totally different way. This stir-fry tasted the same as ‘Korokke’ when all were combined in my mouth. It was a quick and easy lunch, yet very satisfying.

Ingredients

1 Potato
1/4 Onion *thinly sliced
1 clove Garlic *finely chopped
125g Beef Mince
2 Mushrooms *optional, sliced
1/4 cup ‘Panko’ Breadcrumbs
1/2 tablespoon Oil *plus extra 1/2 tablespoon, Butter can be used instead
Salt & Pepper

Method
  1. Peel Potato, cut into small bite-size pieces, cook in salted water until soft, then drain.
  2. Meanwhile, prepare Onion, Garlic and Mushrooms.
  3. Place Oil and ‘Panko’ Breadcrumbs in a frying pan, mix to combine, heat over medium heat, and stir until golden. Transfer to a small plate.
  4. Clean the pan if required, add extra Oil, cook Onion, Garlic and Beef Mince. When cooked, add the drained Potato pieces, stir to combine, and season with Salt & Pepper.
  5. Sprinkle the golden ‘Panko’ Breadcrumbs on top and enjoy. *Note: Today I added some salad.
