If you had the already cooked Beef Mince and Onion, this dish is quick and easy to prepare. If you don’t have it, just cook Beef Mince and Onion with other ingredients. This dish is simple, delicious and nutritious, and it won’t cost you much.

Ingredients
125g Beef Mince
1/4 Onion *finely chopped
*Note: You can use 1 serving (about 140g) ‘Very Versatile Cooked Mince & Onion’
1 small clove Garlic *finely chopped
1 teaspoons Olive Oil
1/2 can Diced Tomatoes *about 200g, OR diced Fresh Tomato
Additional Vegetables e.g. Capsicum, Jalapeño, Corn Kernels, etc.
Salt to taste *I added about 1/3 teaspoon
1 handful shredded Cheese of your choice *I used Melting Cheese Mix
1 serving warm Cooked Rice
Parsley *optional
Seasoning
1/2 teaspoon Ground Cumin
1/2 teaspoon Ground Coriander Seeds
1/2 teaspoon Paprika
1/2 teaspoon Dried Oregano
Ground Chilli OR Chilli Flakes as required
Method
- Cut all vegetables finely OR into small pieces.
- Heat Olive Oil in a small frying pan, I used 20cm pan, over medium heat, cook Garlic and all Vegetables for a few minutes, add Beef Mince, and cook until Beef changes colour. Add the spices and stir.
- Add Tomatoes and bring to the simmer, stirring occasionally, simmer for a few minutes, then season with Salt. Add shredded Cheese on top, cover with a lid, and keep simmering until the Cheese melts.
- Half fill a bowl with warm Cooked Rice, cover with the Beef mixture, add some Parsley if you like, and enjoy.
